I put oil in the skillet and added my herbs (parsley and basil, as well as black pepper) and heated it. Then, I added garlic; after that, diced onions and tomatoes. When the onions were translucent, i laid three chicken breasts on top of the onions and tomatoes, and brushed the chicken with olive oil, then sprinkled more herbs on top. Then I covered the skillet and let the chicken cook.
While it cooked, I broke some leftover lasagna noodles in half, figured I'd do a sort of torn pasta type thing.
When the chicken was cooked through, I removed it and set it aside, then let some of the liquid cook off the vegetables. When it cooked down a bit, I deglazed the pan with shiraz and reduced it.
I folded three half-noodles into triangles on a plate and grated a bit of parmesan over them; then placed the chicken on top. I spooned the reduction over the whole thing and added a bit more parmesan.
Very good and super easy. Plus, the smell of onions and garlic sauteeing in olive oil is like a balm for the soul.
